Air Fryer Chicken Chimichangas

Description

There is no need to deep fry your homemade chimichangas when you can use your air fryer. They are much healthier and just as delicious and are ready in about 20 minutes.

Ingredients

1 1/2 c. shredded, cooked rotisserie chicken
4 oz. cream cheese, at room temperature
4 oz. can diced green chiles, drained
1 oz. package taco seasoning
1 c. shredded Mexican cheese
4 large (8 or 10 inch) flour tortillas
optional toppings for serving: pico de Gallo, sour cream, lime wedges, white queso cheese dip/sauce, etc.

Spray the air fryer basket with non-stick olive oil cooking spray.

In a medium bowl, mix together the shredded rotisserie chicken, cream cheese, diced green chiles and taco seasoning until combined.

Spread one fourth of the chicken mixture onto the middle of a flour tortilla; sprinkle 1/2 c. shredded cheese next to the chicken mixture.

Roll one side of the tortilla over the filling, fold the edges in, and roll the remaining tortilla edge underneath to form a burrito. Repeat with the remaining filling, creating 4 chimichangas.

Working in batches, place 2 chimichangas in the air fryer. Generously spray the tops of the chimichangas with the olive oil cooking spray or melted butter to help crisp them up and give a golden color.

Cook in the air fryer on the air fry setting at 400 degrees F for 8-9 minutes, flipping halfway through and spraying again with the non-stick spray.

Serve immediately with your favorite toppings.
