Change up your taco Tuesday meal a bit with Taco Rice in a burrito. It's a one skillet meal with ground beef, Minute Rice, tomatoes, taco seasoning and cheese all served up in a burrito.
1 lb. ground beef
1 packet taco seasoning
2 c. water
1 can chopped green chilies
1 can chopped tomatoes
2 c. Minute Rice, raw
1 c. shredded Cheddar or Mexican four cheese
sour cream, for serving
warm burritos, for serving
In a large skillet, brown and crumble ground beef; discard excess grease.
Add in taco seasoning, water, chopped tomatoes; stir; bring to a boil. Add Minute rice; stir; lower heat; bring to a simmer; cover. Simmer until the liquid is absorbed, about 5 minutes. Remove from the heat. Top with the cheese.
Serve in warm burritos with a drizzle of sour cream.
