Onions and Mushrooms:
Place the onions and sliced mushrooms evenly across the bottom of a slow cooker.

Patties:
In a medium bowl, combine the ground beef, egg, dry minced onion, garlic and mustard powders, parsley, bread crumbs, milk, salt, and pepper. Mix gently with a fork or hands until just combined. Do not overwork the meat. Divide the mixture into 4 patties.

Heat olive oil in a large skillet over medium-high heat; brown the patties for about 3 minutes per side until they have a nice crust. Transfer them to the slow cooker on top of the onions and mushrooms.

Gravy:
In a bowl, whisk together the beef broth, gravy mix, ketchup, Worcestershire sauce, Dijon mustard, and chopped parsley; pour over the patties in the slow cooker.

Cook:
Cover the slow cooker. Cook on Low for 5 hours or on High for 3 hours.

Thicken the Gravy:
In a small bowl, dissolve the corn starch in water to create a slurry. Remove the patties from the slow cooker; set aside.

Stir the slurry into the gravy. Turn the slow cooker to High; let the sauce cook until thickened, about 5–10 minutes.

Finish and Serve:
Transfer the patties back to the slow cooker. Spoon the thickened gravy over them.

Serve immediately, garnished with fresh parsley.

4 servings.
