Tilapia Florentine Fillets

If one of your resolutions for the new year was to eat healthier, give this fish a try. It's heart healthy, quite tasty, quick and easy to prepare.

Ingredients

6 oz. fresh baby spinach
6 t. canola oil, divided
4 - 4 oz. each tilapia fillets
2 T. lemon juice
2 t. garlic-herb seasoning blend
1 large egg, lightly beaten
1/2 c. part-skim Ricotta cheese
1/4 c. grated Parmesan cheese
lemon wedges and grated Parmesan cheese, for optional garnish

Preheat oven to 375 degrees F.

In a large non-stick skillet, cook spinach in 4 t. oil until wilted; drain.

Place tilapia in a greased 13x9 inch baking dish. Drizzle with lemon juice and remaining 2 t. oil. Sprinkle on the seasoning blend.

In a small bowl, stir together the lightly beaten egg, Ricotta cheese and spinach; spoon over the fillets. Sprinkle on the Parmesan cheese.

Bake until the fish just begins to flake easily with a fork, about 15-20 minutes.

Serve with lemon wedges and more Parmesan cheese, if desired.
