If one of your resolutions for the new year was to eat healthier, give this fish a try. It's heart healthy, quite tasty, quick and easy to prepare.
Ingredients
- 6 oz. fresh baby spinach
- 6 t. canola oil, divided
- 4 - 4 oz. each tilapia fillets
- 2 T. lemon juice
- 2 t. garlic-herb seasoning blend
- 1 large egg, lightly beaten
- 1/2 c. part-skim Ricotta cheese
- 1/4 c. grated Parmesan cheese
- lemon wedges and grated Parmesan cheese, for optional garnish
Steps
- Preheat oven to 375 degrees F.
- In a large non-stick skillet, cook spinach in 4 t. oil until wilted; drain.
- Place tilapia in a greased 13x9 inch baking dish. Drizzle with lemon juice and remaining 2 t. oil. Sprinkle on the seasoning blend.
