Description
These easy Mexican pizzas are healthier than the restaurant version, mainly because the tortillas aren't deep fried. You still get the same delicious ingredients though and they're more economical too.
Ingredients
1 lb. lean ground beef
1 packet taco seasoning
2/3 c. water
1 T. oil
20 flour or corn tortillas
2 c. refried beans (or 16 oz can refried beans)
1 1/4 c. red enchilada sauce (or a 10 oz. can red enchilada sauce
2 c. shredded Cheddar cheese
1 Roma tomatoes, diced
1/2 c. sliced black olives
3 green onions, chopped

Preheat oven to 400 degrees F.
In a large skillet, cook ground beef, crumbling into small pieces as it cooks. Discard grease. Add taco seasoning and water; stir.
Heat oil in a small skillet over medium-high heat. When hot, cook corn tortillas, one at a time until golden and slightly crisp on both sides, flipping halfway through. Transfer to a paper towel lined platter.
Assembly:
Spoon a thin layer of enchilada sauce on top of one corn tortilla. Spread refried beans over the sauce; top with a spoonful of taco meat.
Sprinkle cheese over the meat; place another corn tortilla on top. Spread on another thin layer of enchilada sauce; sprinkle on more cheese.
Bake about 10 minutes or until the cheese is melted and bubbly. Watch carefully to ensure that the cheese doesn't burn.
Serve, garnished with olives, tomatoes, chopped green onions and sour cream.
Serve.
