Description

These taco salad cups are easy to make and are ready in about 20 minutes. They make a great light entrée or appetizer for any type of celebration.

Ingredients

12 wonton wrappers
non-stick cooking spray
1 T. vegetable oil
1/3 c. ground beef or ground turkey
2 t. taco seasoning
1/2 c. shredded Mexican cheese blend
1 c. finely shredded iceberg or romaine lettuce
1/2 c. guacamole
1/2 c. salsa
1/4 c. sour cream

Preheat the oven to 350 degrees F.

Arrange the wonton wrappers in a 12 cup regular size muffin pan; spray them lightly with non-stick cooking spray.

Bake for 5 minutes; remove from the oven; set aside.

Add the vegetable oil to a medium sauté pan; place on stovetop over medium-low heat. Add the ground beef; cook, breaking it apart with a spatula, until browned and cooked through. Discard excess grease. Add the taco seasoning; stir to combine. Remove the pan from the heat.

Divide the the taco meat evenly among the wonton cups. Top with the cheese, lettuce, and a dollop of guacamole, salsa and sour cream.

Serve.

12 cups.
